Leftover Mashed Potato Cakes


This recipe is a great way to use leftover mashed potatoes, which don't get me wrong, are good plain and reheated... but frying them up into patties makes them a little extra special and delicious. My children and husband love these slightly crunchy, warm potato patties with a soft center.
I know many of you still have Christmas leftovers, and this would be an excellent way to use some of those up. We've also done this at Thanksgiving time! Any of those leftover holiday mashed potatoes make great potato patties, and they're so warm and cozy in the winter.


Ingredients:

2c mashed potatoes
1/2 tsp salt
1/2 c sour cream
1/4c oil + more for frying
1c flour

Directions:

1. Mix the mashed potatoes, flour, salt, oil, and sour cream together in a bowl

2. Heat a pan on medium high heat with a good coating of oil or butter on the bottom.


3. Form little patties out of the potato batter with your hands, and let them fry up in the oil until they are brown on one side, then flip.


4. Before frying the second batch, add more oil to the pan so they don’t stick or burn.
