Instant Pot Mashed Sweet Potatoes

We made these for dinner last night and I thought I'd put up the recipe for you all to enjoy! We love these and make them about as often as I make regular mashed potatoes. You can add any extra toppings you like; brown sugar, pecans, maple syrup... but we like the taste of the potatoes as is!

If you wanted to make this vegan / gf / allergy friendly, you could just omit the butter and use 1-2 tbsp coconut oil in its place.


4 sweet potatoes
1/2 stick butter
1/2 tsp salt (1/4 tsp if using salted butter)


1. Wash sweet potatoes and quarter them, you do not need to peel first.
2. Put them in the IP with 1 cup of water
3. Push manual and set the time to 20 min. Do a 10 min natural release, and then you can manually release the rest of the pressure.
4. Drain the water and remove the skins which should be very easy to take off using a knife.
5. Mash the sweet potato and add the butter and salt while it is very hot.

Serve and enjoy!
