Garlic Lime Black Beans


This recipe came out so good that I had to jump on here and share it with you. I've made versions of this a few times before, but this time it hit the sweet spot.

Ingredients:
2 cans black beans
1 bunch green onions or one small onion
2 cloves garlic
1.5 tbsp olive oil
1 tsp lime juice
pinch of salt
2 tsp cilantro (optional)

Directions:
1. Chop the onion and the garlic, and saute them in the oil over medium heat until softened
2. Add the beans, lime juice, cilantro, and salt.
3. Cook for 7 min or so, stirring occasionally but being careful not to mix too often or the beans will break.
