Bodie's Best Ever Quesadillas



When my husband and I were dating, we lived in Southern California which is notoriously a great place to get good quesadillas. We often cooked dinner together in my little duplex, and one evening Bodie made me the most delicious quesadillas either of us have ever had. 

Recently while reminiscing (and with too many tortillas in the refrigerator), I decided to try to recreate his recipe. He told me his steps, and here is what we came up with:




Ingredients:
cooking oil
8 tortillas
shredded cheddar cheese
~1 lb chicken, cooked and chopped up
1 onion
1 tomato
1 jalepeno (optional, or more to taste)
1/4 tsp cumin

optional: serve with sour cream, salsa, avocado, etc.

Directions: 
1. Dice the tomato and onion (and jalepeno if using)
2. Saute tomato and onion (and optional jalepeno) in 1 tbsp of oil on medium high heat until they are soft and onions are translucent. 
2. Add the chicken and cumin and allow to simmer together for 5 min or until it looks well combined
3. Remove the chicken veggie mixture to a bowl
4. Put oil in pan and cook your quesadillas, assembling with cheese, chicken + veg, cheese, and top tortilla. The original recipe folded each large tortilla in half to create these, but I prefer using two tortillas.
5. Flip when lightly browned on one side .
6. Allow to cool for 3 min or so. Cut into triangles and enjoy!
