Oatmeal Bread



1/2 c oatmeal (+ a handful for topping)

2 c hot water

1 c cool water

2 c whole wheat flour

3 c white flour

2 tbsp molasses

1 tbsp honey

1 tbsp instant yeast

1.5 tsp salt

2 tbsp olive oil


In a large mixing bowl add oatmeal, whole wheat flour, and hot water. Mix together and let sit for 30 minutes.

Add the rest of the ingredients and knead for about 5 minutes, you can use a mixer for this. The dough will be very wet, that’s okay.

Cover your bowl and let rise until doubled

Once the dough is risen, put some oil on your hands and grease two rectangle bread pans. Carefully divide the dough, and fold it so that it fits nicely into the two pans. Try not to handle it too much, or it will stick to your hands and be more difficult to shape.

Preheat the oven to 400F

Cover loaf pans and allow bread to rise for 30 minutes 

Sprinkle a handful of oatmeal on the loaves and bake for 30-40 minutes until the loaves have an internal temperature of ~200F. 

Remove from oven and let cool before slicing! If you prefer a soft crust, cover with a clean dish towel as it cools.
